One-A-Penny Little Duck Pizzas, 1p

One-A-Penny Little Duck Pizzas, 1p each.

Made 28, for less than 27p. Fed two adults, a Small Girl and a Small Boy πŸ™‚ Number of pizzas will depend on the size of your cookie cutter. Little duck optional but adorable!

Ingredients:

200g plain flour, 9p (Sainsburys Basics, 65p/1.5kg)
7g fast action dried yeast, 11p (89p/8, Sainsburys)
200ml boiling water
15ml Tablespoon of oil, 2p (Β£4.15/3l, Sainsburys)
Tablespoon of leftover lentil bolognese 5p (21p per portion, used less than a quarter of a portion here)

Sainsburys Basics mozzarella cheese ball, 65p (optional)

How To:

1. Add the flour and yeast to a large mixing bowl.

2. Make a well in the centre, add the oil and most of the water, and mix together to make a soft, sticky dough. Add more water if required.

3. Tip onto a floured work surface, lightly knead and shape into a round.

4. Pop back into the mixing bowl, cover and leave for an hour to rise or until doubled in size.

5. When risen, tip out onto the floured work surface and roll out with a rolling pin. I do mine less than half a centimetre thick, as the cookie cutter I use is tiny, but it’s up to you. Bear in mind when rolling out that the base will double in thickness when cooked! Cut until all of the dough is used, transferring the mini pizza bases onto a lightly oiled baking tray as you go. (You may need to do these in batches!)

6. Top with a smudge of lentil bolognese, (and grated mozarella if using)

7. Pop into the oven at 180C for 15 minutes, and serve to hungry kids πŸ™‚
