This bean chilli uses black beans and haricot beans, with red wine and dark chocolate in the tomato sauce.
Serves 4
Ingredients
- 75g dried black beans
- 75g dried haricot beans
- 1 onion
- 75ml red wine
- 1 carton chopped tomatoes
- 3 squares dark chocolate
- A shake of paprika
- A shake of ground cumin
- 1 small chilli
- 1 vegetable stock cube
Method
- Soak the two types of beans and cook them in fresh water according to their packet instructions. They must be fully tender before they go into the tomato sauce.
- Chop the onion and chilli finely. Put them in a wide pan with the wine, tomatoes, paprika, cumin and crumbled stock cube.
- Cook the sauce over a low heat until the onion has softened. Stir regularly, adding a little water if it becomes too thick.
- Drain the cooked beans and fold them into the sauce. Add the chocolate and continue stirring over gentle heat until it melts and the beans are hot. Serve with rice or a baked potato.
