Fish tagine.


This week’s Guardian recipe was one o my home favourites, fish tagine. I make this in a big batch and freeze it in portions, the flavours develop beautifully when frozen.

    The flavour-enhancing properties of freezing and slow-defrosting (in the fridge, helping cut your electricity bill!) are often over-looked: works for stews, curries and, as here, tagines…

    Jack, sadly I’m finding it increasingly difficult to go over to the Guardian to read your recipes. I just can’t bear seeing the comments, it makes me shake with frustration! A certain ignorant comment (‘Surely though, by now Jack must have got her benefits sorted out and either her debts paid off or declaring herself bankrupt.’) has really p’d me off! Maybe you should get another of those ‘ghastly’ tattoos reading ‘I’m not on benefits anymore you idiots! Learn to read the facts before you make comments!’.

      I only read the comments on Jack’s blog now for this very reason, these people are to lazy to read this blog and find out Jacks story. I’ll bet they are comfortably well off and have no understanding of what it’s like to find yourself at the mercy of the welfare state through no fault of your own.
      Just enjoy Jack’s recipes and continued success😉

      The same poster’s comment about “No Maillard reaction” cracked me up. I always read the comments for the absurdity factor. It’s the same people, making themselves look silly. I’m sure Jack can take it on the chin.

      I’m sure Ottoleghni’s positive reaction will be sending shockwaves, so Jack gets the last laugh.

    I had a wee bit of Chorizo knocking about the fridge. The flavour this gave was incredible! A delicious meal😉

    I made this tonight. I’m vegetarian so I just left out the fish and as I didn’t have sultanas, I found raisins worked well. I served it with Sainsbury’s basic pitta bread and it was delicious. I also used tinned spinach. More recipes please Jack, they’re awesome!

    I would like to read the recipe, but for some reason I can’t. When I click for the full recipe I only see it a moment and then the guardian page gets blank. What’s up with that?

    Tried this and loved it! I like my food spicy so I added 3 tsp (possibly more..) of crushed red chillis instead of the paprika and it balanced out the sweet taste of all the mandarin juice beautifully. Bought more mandarins and chopped tomatoes to make it again this week!
