Spiced Chicken and Mandarin Tagine

This marvelous dish combines chicken thighs, tomatoes, mandarins, garlic, onions and lots Mediterranean spices. Enjoy.

Spiced Chicken and Mandarin Tagine

Ingredients

  • 4 chicken thighs
  • 1 large onion, chopped
  • 2 garlic cloves
  • 280 g chopped tomatoes,
  • 1/2 can broken mandarin segments
  • 15 ml white wine vinegar
  • 15 ml lemon juice
  • 1 vegetable or chicken stock cube
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 small red chilli
  • Handful of fresh parsley
  • Handful of fresh mint

Instructions

  1. Coat a deep skillet with cooking oil and arrange chicken thighs in it, skin side down. Place the skillet over medium heat and let it cook, until browned. Then turn the chicken over to brown the other side as well.
  2. Next, add the chopped garlic, onion, chili, paprika, cumin and turmeric. Then add the chopped mandarins with juice, tomatoes, lemon juice, vinegar, white wine and stir well. Finely add the crumbled stock cube and herbs, give a stir and cook for 5-6 minutes.
  3. When it begins to boil, reduce the heat to medium low and let it simmer for about 20 minutes, until the chicken is cooked through. You may add about ½ cup water, if the mixture begins to dry out.
  4. Serve the dish with some mashed potatoes or cooked rice.
