  • 4 medium white potatoes
  • 1/2 large purple onion, sliced
  • 1/2 tsp salt
  • 1 tbsp dried mint
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Herbs, parsley dill


  1. Cook the potatoes in a pot of water until they become tender. You can use leftover cooked potatoes.
  2. Drain and let them cool.
  3. Chop and place in a salad bowl. Add the sliced onion, olive oil, dried mint, lemon juice and salt. Toss well to coat.
  4. Place in the fridge for 1-2 hours before serving.
  5. Enjoy
