Toss the cooked potatoes with onion, dried mint and lemon juice, drizzle with little oil and your salad is ready.
Quick and easy Potato Salad
- 4 medium white potatoes
- 1/2 large purple onion, sliced
- 1/2 tsp salt
- 1 tbsp dried mint
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Herbs, parsley dill
- Cook the potatoes in a pot of water until they become tender. You can use leftover cooked potatoes.
- Drain and let them cool.
- Chop and place in a salad bowl. Add the sliced onion, olive oil, dried mint, lemon juice and salt. Toss well to coat.
- Place in the fridge for 1-2 hours before serving.
