  • 1 tbsp flour
  • 1 lemon, zest and juice
  • 2 tbsp oil
  • 400 g sprat
  • 200 g mixed salad
  • Salt and pepper to taste


  1. In a small bowl, mix the flour, lemon zest, salt and pepper. Add the oil and lemon juice to a large frying pan and set over medium heat. Toss the fish fillets in the flour mixture until coated and place in the hot oil. Fry for 4-5 minutes on each side, until they acquire golden brown crust.
  2. Serve with mixed salad.
