  • 100 g caster sugar
  • 100 g softened butter
  • 100 g self-rising flour
  • 2 eggs
  • Zest of 1 lemon
  • 1 tsp vanilla essence
  • 4 tbsp lemon curd
  • Crème fraîche, to serve


  1. Place the sugar, eggs, butter, flour, vanilla and lemon zest in a bowl and beat well until creamy.
  2. Place in a medium microwave-safe baking dish and microwave for 3 minutes on High turning once through the cooking. Once the pudding has risen, remove from the microwave and let it cool for 1-2 minutes.
  3. For the meantime, microwave your lemon curd for 30-35 seconds and stir well until smooth. Spoon it over the top of the pudding and serve garnished with a dollop of crème fraîche.
