Kale Pesto Pasta

To make this kale paste, you need to blend kale, cheese, olive oil  and lemon juice in a food processor. Add to freshly cooked pasta and enjoy.

Ingredients

  • 85g kale
  • 85g pine nut, toasted
  • 1 lemon juice
  • 85 g Parmesan, grated
  • 3 garlic clove
  • 4 tablespoons extra-virgin olive oil, plus extra to serve
  • 5 tablespoons olive oil
  • Spaghetti or linguine, to serve

Instructions

  1. Combine the grated cheese, kale, garlic, pine nuts, lemon juice and oils in a food processor and pulse until you have a green paste. Taste and adjust seasonings as needed.
  2. Serve with hot pasta.
  3. Place the leftover in a jar, add a little more olive oil on top and store in the fridge.
