Festive Oatmeal Cranberries Pie

  • 3/4 cup pure rolled oats
  • 2 eggs
  • 4 Tbsp chopped walnuts
  • 3/4 cup organic honey
  • 1 cup dried cranberries
  • 1 Tbsp coconut oil (melted)
  • 3/4 cup coconut
  • GF pie shell, unbaked


  1. Preheat oven to 350°F.
  2. In a bowl, combine all ingredients (except pie shell) and mix to incorporate all ingredients well.
  3. Pour the mixture into pie shell.
  4. Bake for 40 to 45 minutes, or until knife blade inserted near center comes out clean.
  5. Let cool for 15 minutes.
  6. Slice and serve hot or cold.
