  • 2 cups of rice flour
  • 1 tsp of baking soda
  • sea salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp of nutmeg
  • 1 cup chopped walnuts
  • 2 eggs, beaten
  • 6 ripe bananas
  • 1/3 cup organic honey
  • 1 tsp vanilla extract
  • 1 cup melted coconut oil


  1. Preheat the oven to 350F.
  2. Mix the rice flour, baking soda, salt, baking powder, cinnamon, nutmeg and chopped nuts in a bowl.
  3. In separate bowl, combine eggs, mashed bananas, honey, vanilla and melted coconut oil; mix well.
  4. Combine the rice flour mixture with egg mixture and stir well.
  5. Pour the dough into a bread loaf pan. Bake for 50 minutes.
  6. Insert the toothpick into the center of the bread - when the comes out clean, remove it from the oven.
  7. Let cool, slice and serve.
