Bacon Risotto

It takes about 45 minutes to make this dish, but the result is simply unforgettable.

Ingredients

  • 250 g bacon, diced
  • 5 cups chicken stock
  • 2 tbsp butter
  • 1/2 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups Arborio rice
  • 2 tbsp butter
  • Salt and black pepper to taste

Instructions

  1. Dice the bacon, place in a large skillet and set over medium heat. Cook for 4-5 minutes per side, until golden brown on all sides. Transfer to a bowl and set aside.
  2. Melt 2 tablespoons butter in a large saucepan over medium heat.
  3. Dice the onion and garlic and add to the saucepan. Cook for 2-3 minutes, stirring occasionally until golden and tender.
  4. Add the rice and cook stirring frequently for about 2 minutes. Meanwhile heat the chicken stock over high heat. Pour 1/3 of the hot stock over the rice and cook, stirring frequently, until the rice has absorbed all the liquid. While keeping stirring, add the remaining stock in batches 1/3 at a time.
  5. Once the rice has softened and has absorbed all liquid, remove the saucepan from the heat. Add the cheese, remaining 2 tablespoons of butter and cooked bacon to the risotto, season with salt and pepper and stir well to combine.
  6. Serve warm.
