  • 2 tablespoons honey
  • 9 fresh apricots, halved
  • ½ tsp vanilla extract
  • 1 cup low fat plain Greek style yogurt
  • Mint leaves to garnish


  1. In a small glass bowl, combine the honey, yogurt and vanilla extract and mix well. Top the apricots with a spoon of the mixture, garnish with milt leaves and serve.
